History
Mutabbaq is thin dough stretched by hand, folded around a filling of minced meat, egg, onion and leek, and fried on a large flat griddle. The name means "folded". It is a street food of the Hejaz, the western region with Jeddah and Mecca, and it reached South-East Asia as martabak with traders and pilgrims, which is why versions are eaten in Indonesia, Malaysia and Yemen. Sweet versions are filled with banana and cheese. It is especially sold during Ramadan evenings, when stalls in old Jeddah fry it in front of crowds.
