History
Kabsa is rice cooked with meat, usually chicken, lamb or camel, in a broth seasoned with a mix of spices such as cardamom, cloves, black lime, cinnamon, saffron and bay leaf, with tomatoes and onions. The meat is laid on the rice on a large shared platter and decorated with fried almonds, raisins and onions. It is widely called the national dish of Saudi Arabia and is eaten across the Gulf, where it is related to machboos. It grew from the cooking of the Bedouin and the people of Najd, the central plateau. It is the main meal at gatherings, eaten traditionally by hand from the communal platter.
