History
Pelmeni are small dumplings of thin dough filled with raw minced meat, often a mix of beef, pork and lamb with onion, boiled and served with sour cream, butter or vinegar. The name comes from the Komi and Udmurt languages of the Ural region, meaning "bread ear" for their shape. Russians met them as they expanded east into the Urals and Siberia, where they were frozen outside in winter in huge batches and carried on long journeys. They became a staple of Russian cooking, especially in Siberia, and families still sit together to make hundreds at once.
