History
Beef Stroganoff is thin strips of beef sautéed and served in a sauce of mustard and smetana, sour cream. It is named after the Stroganovs, one of the richest families of imperial Russia. Its first known recipe appeared in an 1871 edition of a classic Russian cookbook by Elena Molokhovets. A popular story credits a French chef working for Count Pavel Stroganov in Saint Petersburg, but this is not proven. After the Russian Revolution, émigrés carried it to China, Europe and the United States, where mushrooms and onions were added. In Russia it is served with fried potatoes or buckwheat.
