History
Blini are thin pancakes, traditionally made from yeasted buckwheat or wheat batter. They are one of the oldest Russian foods, and their round shape and golden colour were associated with the sun. They are the centre of Maslenitsa, the week-long festival before Lent, when families eat them every day with butter, sour cream, honey, jam, salted fish or caviar, as a farewell to winter. Blini are also served at funerals and memorials. A Russian saying holds that "the first blin is always lumpy", meaning first attempts often fail.
