History
Żurek is a sour soup made with a fermented starter of rye flour, called zakwas, cooked with smoked meat, white sausage, garlic and marjoram, and often served with a halved boiled egg. Sometimes it is served in a hollowed-out loaf of bread. Sour rye soups were an everyday food of Polish peasants for centuries. Żurek is a symbol of Easter: families eat it on Easter Sunday with the sausage and eggs blessed in church the day before. An old custom called "burying the żurek" marked the end of Lent, when people celebrated no longer having to eat it daily.
