History
Bigos, "hunter's stew", is sauerkraut and fresh cabbage cooked slowly with several kinds of meat and sausage, dried mushrooms, prunes, juniper and red wine. It is reheated over several days and Poles say it tastes better each time. In the past it was a dish of the nobility after a hunt, made with game; today it uses pork, beef and kiełbasa. The poet Adam Mickiewicz described it in his national epic Pan Tadeusz in 1834, which helped make it a Polish symbol. It is eaten in winter and at Christmas, with rye bread.
