History
Pierogi are half-moon dumplings of unleavened dough, boiled and often fried afterwards in butter with onion. The fillings tell the season: potato with curd cheese and onion, called ruskie, sauerkraut with mushrooms at Christmas, meat, or sweet fillings of blueberries and strawberries in summer. Polish legend credits a saint with bringing them in the 13th century, but nobody knows their origin; dumplings were common across Eastern Europe and Asia. A 1682 cookbook, Poland's first printed one, already has recipes. Kraków holds a pierogi festival each August, and families make hundreds for Christmas Eve.
