History
Suya is thin-sliced beef or other meat threaded on skewers, coated with yaji, a spice mix of ground peanut, chilli, ginger and other spices, and grilled over an open fire. It comes from the Hausa people of northern Nigeria, where butchers and grill men have sold it for generations, and it spread to every Nigerian city and to neighbouring countries. It is sold after dark from roadside stands lit by the fire, wrapped in newspaper with sliced onion, tomato and extra spice. It is the classic evening snack with friends and is now made in Nigerian communities abroad.
