History
Jollof is rice cooked in one pot in a tomato, pepper and onion stew until it absorbs all the flavour, often with a smoky layer at the bottom. Its name points to the Wolof, or Jolof, empire of what is now Senegal, where a fish-and-rice dish is believed to be its ancestor. As it spread through West Africa, every country made its own. Nigeria's version uses long-grain parboiled rice, blended tomatoes and Scotch bonnet chillies, bay leaf, thyme and curry powder. At parties a big pot of "party jollof" is essential, and the friendly rivalry with Ghana over whose is best has its own name online: the jollof wars.
