History
Egusi soup is thickened with ground melon seeds, which turn creamy and slightly nutty as they cook. The seeds come from a wild relative of the watermelon grown for its seeds rather than its flesh. The soup is cooked in palm oil with leafy greens such as bitter leaf or spinach, peppers, dried fish or crayfish, and meat, and it is eaten across Nigeria, from Yoruba to Igbo kitchens, each with its own way. It is not drunk from a bowl but eaten with a soft swallow such as pounded yam, eba or fufu, pinched and dipped with the fingers.
