History
Ugali is a stiff porridge of white maize flour and water, stirred in a pot until it forms a firm block, and it is the staple food of Kenya. It is eaten by hand: a ball is pinched off, pressed with the thumb and used to scoop up other food. Sukuma wiki is collard greens or kale cooked with onion and tomato; the name means "push the week" in Swahili, because the cheap greens help families stretch their budget until payday. Maize came to East Africa from the Americas, and ugali became the main food during the 20th century. The two together are the most common meal in Kenyan homes.
