History
Githeri is maize and beans boiled together, a simple dish of the Kikuyu people of central Kenya that has become a staple across the country. It is often fried with onions, tomatoes and sometimes potatoes or greens, and it is cheap and filling. In the colonial and post-independence periods, it became a standard meal in schools and boarding houses. In 2017, a man was photographed eating githeri from a bag while waiting in line to vote, and "githeri man" became a national meme in Kenya. The dish is made in big batches and kept for the next day.
