History
Nyama choma is Swahili for grilled meat: goat, beef or sometimes chicken, roasted slowly over charcoal and seasoned only with salt. It is eaten as a social meal in Kenya, where friends gather at a butchery bar, choose a cut, and wait while it is grilled, then share it on a wooden board. It is served with kachumbari, a fresh salad of tomato and onion, and ugali or roasted potatoes. Weekend nyama choma sessions are a big part of life in Nairobi, and the habit is common in Tanzania too. Some places are known for roasting whole goats on the weekends.
