History
Gulyás means "herdsman", and the dish began as the meal of cattle herders on the Great Hungarian Plain, who cooked beef with onion in a cauldron over an open fire. In Hungary, gulyás is a soup, not a thick stew: beef, onion, paprika, caraway, potatoes and vegetables, often with small pinched noodles called csipetke. Paprika, from peppers that came from the Americas, became its signature only in the 18th or 19th century. In the 19th century, as Hungarians pushed back against Austrian rule, it became a symbol of the nation. What the rest of the world calls goulash Hungarians call pörkölt.
