History
Paprikás csirke is chicken simmered with onion and plenty of sweet Hungarian paprika, then finished with sour cream, which turns the sauce a soft orange. It is one of the paprikás dishes, which unlike pörkölt always include sour cream. It became popular in the 19th century as paprika from the Szeged and Kalocsa regions became Hungary's signature spice. It is served with nokedli, small egg dumplings. Bram Stoker's Dracula opens with Jonathan Harker eating "chicken done up some way with red pepper" on his journey through Hungary, and noting to ask for the recipe.
