History
Pepián is a thick, spicy stew of chicken or beef with vegetables like chayote, potatoes and green beans, in a sauce of roasted and ground tomatoes, tomatillos, dried chillies and toasted squash and sesame seeds. It is considered Guatemala's national dish and one of the oldest, combining Maya ingredients with Spanish additions. The roasting of the seeds and chillies gives it a deep, smoky flavour. Pepián is especially linked to Antigua Guatemala and the central highlands, and it is served with rice and tamales wrapped in leaves. It is cooked for family gatherings and town fairs, and every region seasons it a little differently.
