History
Kak'ik is a red turkey soup from the Q'eqchi' Maya of Alta Verapaz. A local turkey is cooked in a broth with tomato, chillies, garlic, coriander and herbs, coloured red with annatto. Its name comes from the Q'eqchi' words for red and hot. It is a pre-Hispanic dish, and turkey was one of the few domesticated animals of the Maya. It is served with rice and small tamales wrapped in maxán leaves. In Cobán and the surrounding region, it is a dish for celebrations, festivals and Sundays. In 2007 Guatemala declared kak'ik part of its intangible cultural heritage.
