History
Fiambre is a cold salad made once a year in Guatemala, for All Saints' Day on 1 November and the Day of the Dead. It can have dozens of ingredients: pickled vegetables, cold cuts, sausages, chicken, cheeses, olives, eggs, beets and asparagus, all dressed in a vinegar sauce. Families spend days preparing it and share it with relatives, sometimes taking it to the cemetery to eat by the graves of loved ones. A common explanation of its origin is that families once brought the dead person's favourite foods to the graves, and these were later mixed together. Each family has its own recipe and varieties are named by colour, red or white.
