History
Molokhia is a green soup made from the leaves of the jute mallow plant, chopped very finely with a two-handled curved knife and cooked briefly in chicken or rabbit stock. It has a smooth, slightly slippery texture. Just before serving, garlic and coriander are fried in ghee and poured in with a hiss, a moment Egyptian cooks call the tasha. It is eaten over rice or with bread. The plant has been grown in Egypt for thousands of years, and stories say an 11th-century Fatimid caliph banned it for ordinary people, keeping it for royals, which some link to its name.
