History
Koshary is Cairo's working lunch: rice, brown lentils and short macaroni, topped with chickpeas, a garlicky tomato sauce, a splash of garlic vinegar and plenty of crisp fried onions. It is cheap, filling and meatless. Most accounts link it to the late 19th or early 20th century, combining the Indian dish khichdi of rice and lentils, which may have come with British-era soldiers, and Italian pasta from the Italians living in Egypt. Egyptians made it their own. Specialist shops serve nothing else, ladling each part from its own pot in seconds.
