History
Ful medames is fava beans cooked very slowly, traditionally buried overnight in the embers of the public bath furnaces in big copper pots, then mashed lightly with olive oil, cumin, lemon and garlic. The name means "buried beans". Fava beans have been grown in the Nile Valley since the time of the pharaohs, and ful may be one of the oldest everyday dishes still eaten. In Egypt it is breakfast for almost everyone, sold from carts with a giant metal jug, eaten with flatbread, pickles and sometimes a boiled egg or tahini.
