History
Olla de carne, "pot of meat", is a beef soup with big pieces of root vegetables and plantain: yuca, potato, chayote, taro, corn, carrot and green plantain, flavoured with coriander and garlic. It is a traditional Sunday dish in Costa Rica, especially in the Central Valley, and it is made in large pots for the whole family. It is served with white rice, sometimes mixed into the bowl. The soup is a rural dish, born on farms where families used the beef bones and vegetables from the field. It is related to the sancochos of the Caribbean and the cocidos of Spain. Olla de carne is often eaten on rainy days.
