History
Gallo pinto, "spotted rooster", is rice and black beans fried together with onion, sweet pepper and coriander, seasoned with Salsa Lizano, a tangy brown sauce found on every Costa Rican table. It is eaten for breakfast with eggs, fried plantain, sour cream and white cheese, with tortillas and coffee. The name describes the speckled look of the beans in the rice. Costa Rica and Nicaragua both claim it as their national dish and have competed over who makes the largest pot; in Nicaragua it is made with red beans. Ticos, as Costa Ricans call themselves, often say they are made of gallo pinto.
