History
Poutine is French fries topped with fresh cheese curds that squeak when bitten, covered in hot brown gravy that softens them slightly. It appeared in rural Quebec in the late 1950s. Several towns in the Centre-du-Québec region claim it: Warwick says a customer asked restaurant owner Fernand Lachance to add curds to his fries in 1957, and Drummondville says a diner called Le Roy Jucep added gravy in the 1960s. The word is Quebec slang for a mess. For years it was used to mock Québécois culture, but it became a source of pride and spread across Canada.
