History
The butter tart is a small pastry shell filled with butter, brown sugar or maple syrup, and egg, baked until the filling is runny or set with a crisp top. Raisins or pecans are a hotly debated extra. Its earliest known recipe was published in 1900 in a cookbook from Barrie, Ontario. Some link it to the filles du roi, French women sent to New France in the 17th century, who made sweet tarts with local ingredients, but this is speculation. It is one of the few dishes most Canadians call their own, and towns in Ontario hold butter-tart festivals and trails.
