History
Silpancho is a layered plate from Cochabamba: white rice, boiled and fried potato slices, a thin breaded beef cutlet pounded very wide, chopped tomato and onion salad with locoto chilli, and one or two fried eggs on top. The name comes from the Quechua sillp'anchu, meaning thin or flattened, describing the beef. Cochabamba is known as Bolivia's food capital, and silpancho is its most famous dish, served in local restaurants and street stalls, especially at night. It is a large, filling meal and cheap. In Cochabamba it is also folded into bread as a sandwich called trancapecho, sold at markets.
