History
A salteña is a baked pastry, slightly sweet and crisp outside, filled with a juicy stew of beef or chicken, potato, peas, olives, raisins, egg and ají chilli. The filling is set with gelatine so it can be sealed in the dough; in the oven it melts into a broth, and eating a salteña without spilling is a skill: you bite the top and sip first. Its name is linked to Juana Manuela Gorriti, a writer from Salta in Argentina who lived in exile in Bolivia in the 1800s and is said to have made the pastries. Salteñas are eaten mid-morning, and in La Paz they are a Sunday habit; shops often sell out by noon.
