History
Mussels cooked in a covered pot with celery, onion and sometimes white wine or beer, served with a side of fries, are Belgium's best-known meal and are eaten in neighbouring northern France too. Mussels had long been a cheap food on the North Sea coast, and fried potatoes were sold by street vendors in Belgium from the 19th century; restaurants in Brussels and on the coast paired the two and made it a fixed classic in the 20th century. The mussels come mostly from the Netherlands' Zeeland and are best in the colder months. The empty shell is used as tongs to pick out the rest, and fries are dipped in mayonnaise.
