History
Belgium has two main waffles. The Brussels waffle is light and rectangular; the Liège waffle is the one sold on streets: a dense, chewy yeast dough with chunks of pearl sugar that melt and caramelise on the hot iron. Liège tells that it was invented in the 18th century by the cook of the prince-bishop, who wanted a sweet with sugar inside it; that story has no firm record, but the waffle is strongly tied to the city. Stands sell it warm and plain, to be eaten by hand. Belgians generally find it sweet enough on its own; the toppings of cream and fruit are mostly for visitors.
