History
Carbonnade flamande, in Dutch stoofvlees or stoverij, is beef stewed slowly in Belgian beer with onions, a little brown sugar or syrup, mustard and often a slice of bread spread with mustard that melts into the sauce. The beer, often a brown or sour Flemish red ale, gives it a dark, sweet-sour depth, and the dish is found across Flanders and northern France. It is one of the home meals that many Belgians name as their own, and it is a fixture at friteries, where a portion of stoofvlees is poured over fries. Recipes vary by family and by the beer of the town.
