History
Potato babka is a baked dish of grated potatoes, eggs and onions mixed with pieces of smoked or fried bacon, and sometimes sausage, cooked in a pot in the oven until crisp on the outside and soft inside. It is popular in western Belarus and in the Podlachia region of northeastern Poland, where it is known as babka ziemniaczana. It is served with sour cream or with a sauce of pork fat and onions. Like draniki, it shows how central the potato became to Belarusian cooking. It was traditionally baked in a clay pot in the large tiled stove that heated village houses. In 2016 the village of Sula in Belarus claimed a record with a babka two metres across.
