History
Kalduny are dumplings of wheat dough, or in some versions of grated potato, stuffed with minced meat, mushrooms or curd cheese, boiled and served with butter, sour cream or fried onions. The word means sorcerers or wizards in several Slavic languages, though nobody is sure how the name became attached to dumplings. They were a dish of the old Grand Duchy of Lithuania and the gentry of the Polish–Lithuanian Commonwealth, and they are now eaten in Belarus, Lithuania and Poland. In Belarus they come in many forms: potato kalduny, whose dough is made of grated potato instead of flour, are a local speciality. They are related to pelmeni and pierogi, but the potato version is distinctly Belarusian.
