History
Draniki are thick pancakes of grated raw potato, sometimes mixed with onion, fried in oil or lard until crisp and brown, and eaten hot with sour cream. Their name comes from the verb drats, to tear or grate. Belarus is one of the world's largest potato producers per person, and potatoes have been central to its cooking since the 1800s; Belarusians sometimes call themselves bulbashi, after bulba, potato. Draniki are considered the national dish and are eaten everywhere, from home kitchens to cafés, with meat, mushrooms or machanka sauce. Similar pancakes exist in Poland, Ukraine and Lithuania, but the plain Belarusian version is famous for its simplicity.
