History
A Wiener Schnitzel is a veal cutlet pounded thin, coated in flour, egg and breadcrumbs and fried in lard or butter until the crust puffs up away from the meat. Austrian law protects the name: only veal may be called Wiener Schnitzel, while pork versions must say so. A popular story says Field Marshal Radetzky brought the recipe from Milan in 1857, but this story was invented in the 20th century, and breaded meat was known in Vienna earlier. It is served with lemon, parsley potatoes or potato salad and lingonberry jam, and is Austria's best-known dish.
