History
Kaiserschmarrn, "emperor's mess", is a thick, fluffy pancake torn into pieces in the pan, caramelised with sugar and butter, often with raisins, dusted with icing sugar and served with plum compote or apple sauce. The name is linked to Emperor Franz Joseph I, who was said to love it, and several stories explain it, including one where a chef's failed omelette was served to the emperor anyway. Schmarrn means a mess or nonsense in Austrian dialect. It is a classic of mountain huts in the Alps, eaten as a sweet lunch after skiing or hiking.
