History
In 1832, 16-year-old Franz Sacher, an apprentice in the kitchen of Prince Metternich in Vienna, had to make a dessert when the head chef fell ill. He made a dense chocolate cake with apricot jam under a hard chocolate glaze. His son Eduard refined it at the Demel pastry shop and later at the Hotel Sacher, founded by the family. The two businesses fought in court for years over who had the right to call theirs the original, until a settlement in the 1960s. The Hotel's "Original Sacher-Torte" has the jam in the middle; Demel's has it under the glaze. It is eaten with unsweetened whipped cream.
