History
Bún chả is Hanoi's lunch: grilled pork, both patties and slices of belly, served in a bowl of warm fish-sauce dressing with pickled papaya, alongside cold rice noodles and a basket of herbs. The meat is grilled over charcoal on the pavement, and the smoke tells passers-by that a stall is open. It has been eaten in the city for well over a century, and the writer Vũ Bằng described Hanoi in 1959 as a town "transfixed by bún chả". Hanoians dip each bite of noodle and herb into the bowl. The dish reached global fame in 2016, when a US president ate it at a small Hanoi restaurant.
