History
Bánh mì first meant simply "wheat bread", the baguette the French brought to Vietnam in the 19th century. For decades it was eaten in a French way, with butter or pâté. The sandwich came together in Saigon in the 1950s, when bakers made lighter loaves and stuffed them with a Vietnamese mix: pork cold cuts, pâté, mayonnaise, pickled carrot and daikon, cucumber, coriander and chilli. Stalls such as Hòa Mã, opened in 1958, are often cited as pioneers. Cheap, fast and portable, it remains a breakfast staple from Saigon to Hanoi.
