History
Pabellón criollo is a plate of shredded beef stewed with tomato, onion and peppers (carne mechada), black beans, white rice and fried ripe plantain slices, called tajadas. It is the national dish of Venezuela. The four parts are said to stand for the mixed peoples of the country, Indigenous, African and European, and the name pabellón, flag or banner, is often linked to the colours on the plate. The dish took shape in colonial times from the leftovers of the plantation economy. Some versions add a fried egg on top, called a caballo, a horseback rider. It is served in homes and restaurants across the country.
