History
A cachapa is a thick pancake of fresh ground corn, slightly sweet, cooked on a hot griddle and folded around a slice of soft white cheese such as queso de mano or telita, which melts inside. Fresh corn cakes were an Indigenous food of the region before the Spanish arrived. Cachapas are sold at roadside stalls in the central states of Aragua and Carabobo and in the Andes, where farmers grind fresh corn by hand. They are often served with fried pork, called chicharrón, or with butter. They are a typical breakfast or weekend road-trip meal for Venezuelan families.
