History
Samsa is a pastry filled with lamb and onion, often with fatty tail fat, baked against the walls of a tandir clay oven until the crust is crisp and the inside juicy. It is related to the samosa of South Asia and to pastries across the Middle East, all linked by the old Persian sanbosag. In Uzbekistan, samsa is the most common street food, sold from tandir ovens in bazaars, in triangles, squares or round shapes. Fillings change by season, with pumpkin in autumn and greens in spring. Samarkand and Tashkent each claim the best version.
