History
Lagman is hand-pulled wheat noodles served with a stew of meat, peppers, tomatoes, onions and other vegetables, either in a broth or fried. It is a Uyghur dish, and its name and method connect it to the pulled noodles of north-west China, lamian. Uyghur and Dungan communities brought it into Central Asia, where it became part of the cuisine of Uzbekistan, Kyrgyzstan and Kazakhstan. The cook stretches and swings the dough to make long, even noodles. In Uzbekistan, Khorezm is known for its own version, and lagman is one of the dishes served in every teahouse.
