History
Varenyky are boiled dumplings, the name coming from varyty, "to boil". The dough is thin and soft, and they are filled with mashed potato, curd cheese, sauerkraut or, in summer, sour cherries. They are served with sour cream, fried onions or butter. Varenyky are part of the twelve meatless dishes of the Ukrainian Christmas Eve supper, and appear in Ukrainian folk songs and in the stories of Nikolai Gogol. The town of Cherkasy has a monument to them. They are close relatives of Polish pierogi, and Ukrainians abroad helped spread them to Canada.
