History
Borscht is a sour soup, and in Ukraine it is usually red with beetroot, cooked with cabbage, potatoes, carrots, beans and often meat, soured with vinegar or fermented beet juice, and served with sour cream and garlic bread rolls called pampushky. The name comes from the Slavic word for hogweed, an older soup made from that plant. Beetroot borscht developed in what is now Ukraine centuries ago, and every region and family has its own version, from green sorrel borscht in spring to fish borscht. In 2022, UNESCO added the culture of Ukrainian borscht cooking to its list of heritage in need of urgent safeguarding.
