History
Rösti is grated potato fried in butter or fat into a golden, crisp round cake. It started as a breakfast of farmers in the canton of Bern, who ate it with coffee before going to work. It spread across German-speaking Switzerland and became a symbol of it: the cultural and language border with the French-speaking west is jokingly called the Röstigraben, the rösti trench. Cooks argue about using raw or boiled potatoes. Many regions add their own ingredients: bacon, onions, cheese, apples, or a fried egg on top, and it is often served as a side with Zürcher Geschnetzeltes, sliced veal in cream sauce.
