History
Raclette is both a cheese and a meal, and both come from the canton of Valais. The name comes from the French racler, to scrape: half a wheel of cheese is held next to a fire or heater, and as the cut face melts, it is scraped onto a plate. It is eaten with boiled potatoes in their skins, small pickled onions and gherkins. Herders in the Valais Alps are said to have melted cheese by their fires for centuries, and accounts of the custom go back to the Middle Ages. Raclette du Valais is a protected name in Switzerland. Today many homes use small tabletop grills with little pans, one per person.
