History
The Spanish tortilla is a thick omelette of eggs and potatoes slowly cooked in olive oil, usually with onion, flipped in the pan with a plate. A letter written in 1817 to the Navarre courts mentions it, and popular stories credit various people, including a widow who fed a Carlist general during the 19th-century wars, but nobody really knows. Potatoes had arrived from the Americas, and the dish turned a few cheap ingredients into a meal. Spain is divided between those who add onion and those who don't, and between runny and set. It is served in every bar as a tapa, warm or at room temperature.
