History
Churros are lengths of simple dough of flour, water and salt piped through a star-shaped nozzle into hot oil and fried until crisp, then dusted with sugar. Their origins are unclear: some say shepherds in the mountains invented them as bread that could be cooked over a fire, others connect them with fried doughs brought from China by the Portuguese. In Spain, and especially Madrid, they are eaten for breakfast or after a late night, dipped in thick hot chocolate. Madrid's Chocolatería San Ginés has served them since 1894. Thicker ones are called porras.
