History
Portugal has loved salt cod, bacalhau, since its fishermen sailed to Newfoundland in the 16th century, and people say there is a recipe for every day of the year. Bacalhau à Brás is one of the most popular: soaked, shredded cod fried with onion and thin matchstick potatoes, bound with lightly scrambled eggs, and topped with black olives and parsley. It is said to come from Bairro Alto in Lisbon in the late 19th century, named after a tavern keeper called Brás or Braz, though nobody has proved who he was. It is quick, cheap and comforting.
